Who's going to buy everything? What makes you think the elites care if the poor buy their stuff or starve? If you can't buy from them that means they arent paying you. The production will shift to what the elites want to purchase from each other and the poor who can't do jobs AI can't replace them at (yet) will join the homeless on the streets.
