You are assuming universal availability, and that the availability will remain universal once civilization starts to collapse.
I haven't run the numbers, but I'm pretty sure that then number of people required to keep the internet operating at the level you consider a threat is a fair bit higher than the minimum viable breeding population. Or, to put it another way, the AI girlfriends will stop existing long before we are at threat of becoming extinct.
