I think the issue with people teaching the bookwork portion is the redundancy in splitting time between students. With AI, the questions you have regarding the functions can be answered then and there without having to wait for the teacher to get to theough 7 to 10 other students and their own questions.
I'm currently using it for my own assignments, and the amount of time it saves is amazing. As my physics professors once said, "Imagine if the scientists of ancient times told us not to use computers and microscopes, simply because they viewed it as terrifying technology."
