It's not quite that simple. The colour of someone's face rarely changes across the surface, so you can use brightness to infer shape/shadows. Also, you can capture depth information if you have video of them moving. We've managed to build some very complex models now that can model 3D structure from just a 2D image quite accurately, although face recognition tech is a long way away from using that stuff
