We went to the moon with less processing capacity than a modern calculator. AI is not needed for the exploration of the solar system, and interstellar travel needs even less powerful cpus. Aim, burn, coast, turn around to break, that's it.
And do not forget, humans ALSO are capable of self repair and self perpetuation. There is no reason to think we will suddenly disappear.
