Actually, the problem isn't really even empathy, it's just the open ended nature of most professional work. As it turns out, LLM's by their very nature are very bad at completing open-ended unstructured tasks with anything like regularity and consistency. That's why the major tech platforms have all transitioned to coding. Coding is the one area where they can actually make real progress with LLMs precisely because it's more deterministic and less open ended than soft-skills jobs like customer service.
