Unfortunately (or fortunately depending on who you ask) a sufficiently skilled user of genAI will not fail both of these.
There absolutely is a lot of trackable progress both in the course of making an individual AI image and in the evolution of skill and artstyle of an AI user (advanced AI + skilled operator CAN result in unique artstyles not copied from other humans, it's just really difficult to pull off).
Similarly, maintaining consistency in different angles or creating consistent characters is also purely a matter of skill. AI can do it.
Most criticism of the "AI can't so X!" nature comes from the fact 95% of AI art on the internet is low quality slop. I'm not exactly defending AI here — just pointing out that if your argument against it is this, it only works when the AI user is clueless or lazy (which, to be fair, is most of them).
