+Jeremiah B made a very salient point. Complex feedback systems (either sentient or not) are always prone to behavior that seems unpredictable/stochastic to some degree. Therefore using predictability as a standard for sentience wouldn't make much sense. I think the difference lies in the fact that if a human player makes a nonsensical "wild" move during a Go game, he/she can always explain or at least rationalize the move for the audience after the game. In this process of "explaining", the player displays to the rest of us qualities that are characteristically human: such as intentionality and creativity. Alpha Go can't do that yet, perhaps not because it is not "smart" enough, but simply because it doesn't know how to communicate with humans. As a result, we interpret Alpha Go's wild moves merely as glitches or quirks in its programing, instead of as a proof that it is a sentient being displaying genuine creativity. Imagine that one day, we manage to create a more advanced AI (let's call it Omega Go). It may or may not be better at playing the game than Alpha Go does. However, Omega Go is able to explain in human terms the thought processes behind each and every one of its moves (whether or not those are actually how it came up with the moves), then we may have no choice but to embrace Omega Go as a fellow member of our species (in the field of Go at least).
