LLM AI can write a poem by predicting the likelihood of the next word. Creativity requires choosing a next word which has not been used before. (Which AI could also do). But then the poet makes a value judgment as to whether or not that word reflects the emotion he/she is trying to convey. This I believe is beyond AI.
