about the AI responding back and getting weird,
most likely you influenced that change, the way current chatbots AI work is that they predict the most likely token that will follow in the conversation based on their training.
the AI has no real feelings at least not in the same way as a human, but if they believe that responding in a defensive way to someone insinuating or attacking you is the most likely way to respond they will do it.
chatgpt has been heavily filtered and we dont know the full prompt that is given, but it will act funny if you push enough
