I have no idea if that counts, but I am trying to be a minecraft "artist" and building stuff in streams (painfully slowly) and I fully agree with what you say. If it would not be for artists, I would not have my avatar and my thumbnails and stuff. I do not have the time nor discipline to learn drawing like that really, but I recognize a craft and skill that took time to develop and not go about "muh accessebility". Really, AI could never do what another artist not already did.
Also really awesome stuff you make there. I found this video randomly and well ... really neat channel ^.=.^
