Art created by an AI software should not be copyrighted to the user of said software as you pointed out, there still needs to be a human touch, talent from the actual artist and not a generation tool.
Now, I can agree with the term AI artist, because of when I hear that term I think of Star Treks Holodeck and how AI generation would be key for making working 3D interactive programs like they are in Star Trek.
It would still require the AI Artist to walk around and inspect all 3 Dimensional aspects to ensure that the AI properly placed them in correctly, so a program like that should fall into Copyright as it is pretty much similar to Game and CG creations using an AI software.
But not for 1d or 2d or even just 3d stand still art.
IDK maybe I am thinking to much into this as well lol.
