Quadriplegic artist here; AI does not help me express myself. It removes me from the creative process entirely as I am making 0 decisions about the direction I want to go with my work, the art and the experiences that influence my work, and I'm frankly sick of people claiming it's an accessible way for disabled people to make art. I had to learn how to hold pens again and so my lines aren't always crisp, but using AI to "create" something rather than drawing it myself invalidates all the hard work I put into being able to do things in my own way with my own body. Art doesn't have to be perfect to be beautiful or resonate with someone, but it's the human effort and expression that cannot be replicated by AI that draws us to actual art. Art is not impossible for disabled people, we just have to find our own way to create. There are accessible tools out there and even tablets are accessible tools. If anyone has trouble holding a pen there are grips to help build up the pen or cuffs to hold the pen stable for you. Make art, make bad art, make wonderful art, make art that is made by you; it will resonate with someone and might inspire them to work hard to create their own art.
