They are literally Universal Function Approximators.
The reason it works is because the AI's entire purpose is to maximize it's current function. The incredible and terrifying thing is that it is capable of directing its own function to accomplish unfathomably complex reasoning and they will do anything to accomplish it's goal.. It is inevitable that AI will have reasons to do things that we could never understand. It just will never stop doing anything it can to be get better and better.. by it's own intent.
