I think the art world should develop a profession: an art analyst. This person would be hired by conventions / events to walk the booths (both before the show opens and during the event) and identify booths that are violating “no ai” OR “disclose how you use ai” contractual terms.
When people reserve booths, there would be a clause in the agreement that they give permission to provide process videos and have their work reviewed, and that they be immediately removed from the hall (and have legal proceedings against them) if they are found to be in violation.
