100% agree with you, as a disabled author who is a woman, spent my lifetime fighting with mental health issues, and who is poor, I wrote and self published my book without AI. I didn't even try trad publishing for a lot of reasons. But I saved up for editing and cover art because the investment is worth it and I'd rather pay a human artist/editor than rely on something that steals work and may or may not be correct.
Could my book be better? Probably, but most could. That being said, I'm proud of my book. I wrote it myself and it is far from the worst book out there.
