The reason why they are so careful with the music one is that the music industry will sue them. Because most artist don't have the money to do that they get away with this.
About the last part, I also seen some aspiring artists and some already working ones getting down because of AI. Usually what I tell them is that this technology as it is is more primitive that AI bros will have you believe. I know this because I tested stable diffusion myself to see what all the fuzz was about. It can do some decent stuff but still needs a lot of human input and its not ready for professional use and after reading how it works I doubt it can really get better than it is right now.
How it is right now its like a more advanced snapchat filter. That is why you have that Lensa AI photo editor. Some of the best results of these things are made by adding a photo or a drawing and then the AI just do things to it.
