I think the main difference between AI images and human-made-art is the process. The types of machine learning algorithms used are inherently deterministic, so much so that you actually have to introduce some kind of randomness to produce varying outcomes, its robotic, it will always lack the instability and meaning, that hidden complexity that only comes from knowing/speculating on the experience of the author. We can easily analyze a Van Gogh, but without the artist, we don't get any of the deeper meanings behind his paintings that make them so interesting to look at. I will actually let the folks I commission take some creative liberties with my fursona, I do have a ref sheet for him, but it's just a reference, I know some of the artists I've commissioned personally, which adds to the meaning behind the subtle differences between the way his horns are drawn, or whether he's drawn digitigrade or plantigrade. I really only give them a general color scheme and a direction, and I enjoy the process of seeing something I've come up with being created by someone who's skilled. (This is also why I don't rush the artist) AI will never be able to replicate that.
