AI "art" is good for two things: Nice looking placeholder stuff for quick prototyping which will then be replaced and some references if you absolutely can't find references that work for what you're looking for. Also the only digital tool that feels lazy (in my opinion) is the generative fill tool and it rarely turns out as good as doing it yourself though that might be my own bias.
