The only flaw I can see in the scenario is this: when the rate of layoffs starts ramping up, spending in the economy slows. One person's spending becomes another person's income. Or a firm's revenue. As spending drops, GDP drops, and the stock market drops. So unless the AIs are getting paid and doing the spending too, the consumer spending portion of GDP will decline until the economy is in a deep freeze, with no more circular flow of goods, services, and money. Companies would not longer have any incentive to employ AIs with no revenue to be generated from AI productivity gains. But UBI would not work; that part is right. That's like taking buckets of water out of the deep end of the pool, walking around and pouring it into the shallow end, and thinking that the pool water level should rise in the shallow end.
