6:40 "AI can create a perfect replica while humans cannot". That is correct, but the reason for it is that human brains are simply bad at learning new things and lose tons of information in the process.
When you're giving AI a dataset to learn from, it is doing a very similar thing that a human brain would do if given that dataset and told to learn from it. The ONLY difference is that the AI is infinitely better and more efficient at the task.
AI by definition has been built to mimic how the neurons in the human brain learn and adapt, so saying that AI is functionally completely different from human learning is just wrong. It is incomprehensably better at the same task, but it is not doing a different task.
The purpose of the current AI models is to delegate the entire process of "learning" the composition of art to a perfect supercomputer instead of the human mind, and then letting a human make limited text-based requests to combine the concepts that the model has learned.

The AI models' primary purpose is not to copy and paste anything, it hypothetically has the ability to do it (though the output will never be a perfect 1 to 1 copy), the same as a person could take a copy of someone's work, trace it, and repost it, but that doesn't mean that the entire idea of AI art is just about reposting existing art. It learns from a combination of existing art to create new art. Being able to make near exact copies is simply an unnecessary biproduct of the process.
And also as a final note, the current version of the AI models is essentially just the first steps of the technology. The end goal of these AI is not to copy someone's art, the goal is to make a comprehensive model with a dataset of literally everything that exists, that will be able to create perfect images of any situation, any pose, any background, and any character in any style. And to do that, these AI need to have the ability to take in every existing image they can physically get their hands on.
That is simply how technological advancement works. We take old stuff that took a lot of effort to make, and we build upon it to make the same task easier, more refined, and more accessible. This is the exact same situation as manual labor being replaced with machines, now they're simply becoming so good that they will replace intellectual work as well.
