I don't know that making AI-generated images marginally worse by feeding it poison is actually going to defeat generative AI. Both because I'm not sure that the poisoned data is going to worsen the quality of the generated images versus the rate at which the technology and data set is improving, and because AI Bros have already demonstrated that their enthusiasm for this technology is undiminished by how shitty the results are. But honestly the important thing is that you're having fun!
