You can use open source models like llama 3.1. If the service you run it on is with a company you trust, or better yet you run it on your own (or a rented VM) then your data is safe.
Also it‘s very unlikely that chatgpt outputs a complete text that it has seen once in a chat. A famous poem can be extracted from its “memory” with a specific prompt because it was likely seen on many poetry websites and other training corpora they have. It mainly retains the basic language features and general ideas
