I don't think AI art is boring but my reaction to it the same as you described, once I find out it's AI generated I lose interest.
Like take banksy for example, his art might be simple at first glance but there's a story behind it and the story behind it answers many questions about it and makes it x100 better, AI can generate and depict the same looking image but it won't have any story behind it, no reason for it's creation, no message, it would literally be just a good looking image without a soul.
