It's likely he had a friend in the car and was showing off the self driving. He probably didn't realize the auto-drive would disengage if he put too much pressure or torch on the steering wheel. When it did disengaged, the reverse torque from the car would have suddenly stopped. This sudden release of torque pressure likely caused him to over steer in the direction he was applying torque. I've had new Tesla (and lane keep) drivers do that to every time I got into their car for the first time.
