Small companies don't work that way, not manufacturing, unless if you are talking restaurants or hotels where employees are not required full time as they can be replaced by almost anyone with minimum training. I doubt inflation will be less having AI running the show, so most likely for your scenario to work there would have to be some sort of Universal Income for people to meet their obligations.
